Zucchini Fritters 

2 cups shredded zucchini 

1 egg

¼ cup flour 

Dash nutmeg 

¼ teaspoon each salt and pepper 



  • Shred zucchini and using your hands, squeeze out any extra water. 

  • Mix all ingredients together, stirring well.

  • Form the zucchini mixture into small balls.  

  • In a skillet, over medium heat, coat the bottom of the pan with olive oil and add fritters. 

  • Cook 4 minutes on each side. 

  • Basil aioli: In a blender, mix ½ cup mayonnaise, 1 teaspoon lemon juice, ¼ cup basil leaves, salt and pepper

1 lb. salmon 


Coat salmon with salt and pepper. In a skillet, heat olive oil over medium. Add salmon and cook about 4 minutes on each side. 


Blueberry Salsa

½ cup blueberries 

¼ cup cucumber, diced

1 teaspoon jalapeno, minced 

2 teaspoons lime juice 

Salt & pepper 



Mix all ingredients together, chill and serve with salmon.

Peach and Shrimp Salad

8 oz. cooked shrimp 

1 large peach, cut into cubes  

½ cup cucumber, cut into small pieces 

4 cups lettuce 



Cumin dressing: 1 teaspoon cumin, 1 teaspoon cinnamon, ¼ cup orange juice, ¼ cup olive oil, salt and pepper. Mix well and allow to marry for 30 minutes, mix again.
